Caledonian Cream

An easy, creamy dessert from Scotland.

Serves: 4

Ingredients

  • 4  ounces cream cheese, softened
  • 4  fluid ounces  double cream
  • 1  tablespoon orange marmalade (the kind with orange peel in it)
  • 2  tablespoons brandy (or rum)
  • 2  teaspoons lemon juice
  • 1  tablespoon sugar (to taste)
  • For the base

  • 4  oranges, peeled, pith removed and segmented
  • 4  teaspoons brandy (or rum)

Directions

  1. Place first 6 ingredients in a blender and blend until smooth. Add more sugar if needed.
  2. Place the orange segments in four long-stemmed glasses and add a teaspoon of brandy (or rum) to each glass.
  3. Divide the cream on top of each.
  4. Chill until ready to serve. Serve chilled.
