Cajun Pizza

Pizza is so versatile. You can adjust the toppings to suit you taste. This is from The Giant Book of Tofu Cooking but you don't have to use tofu. Use seafood or even blackened chicken, or just use the veggies! The cooking time includes the 30 minutes needed to marinate the tofu or seafood. Show more

Yields: 8 slices

Ingredients

  • 12  ounces extra firm tofu (optional) or 12  ounces  cooked shrimp (optional) or 12  ounces  cooked crawfish (optional) or 12  ounces  marinated mussels, cooked (optional) or 12  ounces  blackened chicken (optional)
  • 1  tablespoon  vegetable oil
  • 1  teaspoon cayenne pepper (to taste)
  • 1  teaspoon crushed red pepper flakes
  • 1  teaspoon black pepper
  • 1  teaspoon cumin
  • 14  inches  prepared pizza crust
  • 1 12 cups  pizza sauce
  • 14  ounces  roasted red peppers, drained
  • 3  cups mozzarella cheese, shredded

Directions

  1. Crumble tofu, if using, in a large bowl or add seafood; add oil and spices; mix well and marinate in refrigerator for at least 30 minutes.
  2. Place pizza crust on a baking sheet; cover generously with sauce; top with tofu, seafood or chicken, peppers and cheese.
  3. Bake at 450F for 8 to 12 minutes or until cheese has melted and toppings are well heated.
