Cajun Pizza

Ingredients
- 12 ounces extra firm tofu (optional) or 12 ounces cooked shrimp (optional) or 12 ounces cooked crawfish (optional) or 12 ounces marinated mussels, cooked (optional) or 12 ounces blackened chicken (optional)
- 1 tablespoon vegetable oil
- 1 teaspoon cayenne pepper (to taste)
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 14 inches prepared pizza crust
- 1 1⁄2 cups pizza sauce
- 14 ounces roasted red peppers, drained
- 3 cups mozzarella cheese, shredded
Directions
- Crumble tofu, if using, in a large bowl or add seafood; add oil and spices; mix well and marinate in refrigerator for at least 30 minutes.
- Place pizza crust on a baking sheet; cover generously with sauce; top with tofu, seafood or chicken, peppers and cheese.
- Bake at 450F for 8 to 12 minutes or until cheese has melted and toppings are well heated.
