Cajun Corn Casserole

Was looking for a corn casserole for Thanksgiving and this is what I made up.

Serves: 10

Yields: 10 

Ingredients

  • 1 (15 ounce) can  creamed corn
  • 2 (15 ounce) cans  creamed corn
  • 1 (10 ounce) can rotel
  • 4  ounces Velveeta cheese (cubed)
  • 1  teaspoon season salt (I used creole seasoning )
  • 2  eggs
  • 3  ounces  Ritz crackers

Directions

  1. Preheat oven to 350.
  2. Mix all ingredients except one stack of ritz crackers. Put into a greased 1-quart casserole dish.
  3. Bake for 35 minutes.
