Cajun Baked Catfish

Ingredients
- 3 slices bacon, diced
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 cup butter (2 sticks)
- 2 teaspoons cayenne pepper
- 1 1⁄2 teaspoons Grey Poupon mustard
- 1⁄4 teaspoon basil
- 1⁄4 teaspoon thyme
- 1⁄2 teaspoon oregano
- 5 dashes Tabasco sauce (or to taste)
- 2 tablespoons crab boil, spice
- 1 1⁄2 lbs catfish fillets
Directions
- Preheat oven to 375º.
- Saute the diced bacon, onion and garlic. Add the butter and herbs. Simmer 3 minutes. Add the fish, stir and simmer 3 minutes more.
- Transfer to a baking dish and bake for about 20 minutes or until the fish is done.
