Cactus Eggs

Learned to make these many years ago by watching an elderly neighbor .

Ingredients

• 2⁄3 cup nopales, rinsed, dried and chopped
• 4  eggs, whisked
• 2  tablespoons  salsa de chile fresco or 2  tablespoons salsa, of your choice
• 1⁄3 cup colby-monterey jack cheese, grated
• 2  flour tortillas

Directions

1. In large frying pan scramble Nopales, eggs, and Chile Fresco together. When eggs are set place in tortillas and top with cheese.
