Ingredients
- 5 ears corn on the cob
- 1 large onion, sliced
- 1⁄4 lb linguica sausage, sliced (Portuguese smoked sausage)
- 1⁄4 squash, diced
- 1⁄2 lb fava beans (or lima beans)
- 2 ripe tomatoes, diced
- 2 tablespoons olive oil
- 2 peppercorns
- 3 -4 cups water
- 1 bunch of flat leaf coriander
Directions
- Scrape off the fresh corn kernels into a boiler pot.
- Add to the corn the squash, fava beans, tomatoes, and peppercorns and enough water to cover
- Gently saute onion, linguica, and pepper in olive oil; add to corn pot.
- Bring to a boil.
- Reduce heat and let simmer until tender.
- Prior to serving, season with salt and garnish with chopped flat leaf coriander (cilantro).
