Cabbage and Noodles

Serves: 6-8
Ingredients
- 1 lb egg noodles, cooked and drained (or you could use ziti pasta)
- 1 large head green cabbage, coarsely chopped
- 1⁄2 cup butter or 1⁄2 cup margarine
- 1⁄4 cup olive oil
- 1 garlic clove, minced
- 5 basil leaves, finely chopped (or 1 T dried basil)
- 1 tablespoon fresh parsley, chopped (or 1 T dried)
- 1 small sweet onion, chopped
- 1 tablespoon lemon zest
- 1⁄4 teaspoon crushed red pepper flakes
- salt, to taste
- fresh ground black pepper, to taste
- 1⁄2 cup parmesan cheese, grated
Directions
- Boil cabbage until soft; drain.
- In large nonstick skillet, melt the butter with the olive oil.
- Add garlic, basil, parsley, onion, lemon zest, red pepper flakes, salt and pepper.
- Saute until the cabbage starts to brown.
- You can put a lid on it and keep stirring every few minutes.
- When the cabbage is nicely browned, add cooked noodles and mix.
- Add the parmesan cheese and mix.
