Cabbage and Ground Beef Soup or Stew

Ingredients
- 1 lb ground beef (I use extra lean)
- 1⁄2 head cabbage, cut into bite size pieces (more or less depending on size of cabbage)
- 2 cups vegetable juice (like V-8)
- 1⁄4 teaspoon pepper
- 1 tablespoon dried parsley
- 4 beef bouillon cubes
- 1⁄4 cup soy sauce
- 4 cups water
- 14 1⁄2 ounces canned tomatoes (diced, I have used tomatoes with green chiles.)
- 10 3⁄4 ounces onion soup (condensed and blended to liquid)
- 2 teaspoons garlic, minced
- 14 1⁄2 ounces carrots, canned (or equivalent fresh)
- 1⁄4 cup frozen peas
- 2 potatoes, cut into bite size pieces
Directions
- Cook ground beef. Add all the ingredients and simmer until cabbage is tender. If you like to give it more of a brown color, add a little Kitchen Boquet.
