Button Cookies (Cream Wafers)

Yields: 20 cookies or so

Ingredients

  • Cookie Dough

  • 1  cup butter, softened
  • 2  cups flour
  • 12 cup  whipping cream
  • Filling

  • 12 cup butter, softened
  • 1 12 cups powdered sugar
  • 2  teaspoons vanilla
  •  food coloring (optional)

Directions

  1. Mix together the dough ingredients, cover, chill.
  2. Roll dough thin onto a floured dishcloth. Don't wait for it to get warm or it doesn't work.
  3. Cut into circles about 1 1/2 inch diameter.
  4. Dip circles in sugar and poke with a fork 4 times (its what makes them look like buttons!).
  5. Bake at 375 degrees for 7 to 9 minutes.
  6. Mix together the filling and fill 2 cookies to make sandwiches - putting the pan sides together.
