Butterscotch Cheesecake

Ingredients
CRUST
- 3 cups graham cracker crumbs
- 1⁄2 cup melted butter or 1⁄2 cup margarine
- 1⁄4 cup sugar
FILLING
- 2 (8 ounce) packages cream cheese, softened
- 2 eggs
- 1⁄2 cup sugar
- 1 teaspoon vanilla
TOPPING
- 1⁄2 cup butterscotch chips
- 1 teaspoon butter or 1 teaspoon margarine
Directions
- Preheat oven to 325F degrees.
- Combine crust ingredients.
- Press into 9 in pie pan.
- With mixer, beat cream cheese until fluffy.
- Add eggs, beat well.
- Add sugar and vanilla.
- Pour over crust.
- Bake for 1 hour or until toothpick comes out clean.
- Turn oven off; allow to cool in oven.
- In small saucepan, on low heat; melt chips and butter.
- Serve cheesecake with a dollop of butterscotch sauce.
