Butternut Squash Meatloaf

Serves: 6-8

Ingredients

  • 2  teaspoons  vegetable oil
  • 34 cup yellow onion, diced medium
  • 2  teaspoons  minced garlic
  • 1 12 cups  butternut squash, peeled and diced medium
  • 12 cup  diced bacon (3 oz)
  • 1  teaspoon dried sage
  • 12 teaspoon crushed red pepper flakes
  • 1 12 lbs  ground meat (turkey, rabbit, or pork)
  • 1  cup  grated parmesan cheese
  • 1 -2  slice  white bread, diced medium
  • 1  large egg
  • 2  teaspoons salt
  • 12 teaspoon pepper

Directions

  1. Preheat oven to 350 degrees and prepare rimmed baking sheet with parchment paper.
  2. Heat oil in medium skillet over medium-high. Add onion,, garlic, squash, and bacon. Cook, stirring occasionally, until onion is soft, about 5 minutes. Add sage and red pepper and cook one minute.
  3. Combine meat, cheese, bread, and egg in large bowl. Add vegetables, 2 tsp salt and 1/2 tsp pepper. Mix well with hands. Form into 4" x 10" loaf on pan. Bake until meatloaf is cooked, about 40 minutes. Let rest 15 minutes before cutting.
