Buttermilk Scone

Ingredients
- 2 cups flour
- 1⁄4 cup sugar
- 2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 6 tablespoons butter
- 1 large egg (lightly beaten)
- 1 cup low-fat buttermilk
- 1 cup raisins (or any dried fruit or berry)
Directions
- Preheat oven to 400.
- Combine flour, sugar, baking powder and salt.
- Cut in the butter.
- Stir in the raisins.
- Crack the egg into a 1 cup measuring cup and beat lightly. Fill the rest of the measuring cup with buttermilk and add all to the dry mixture.
- Stir until moist, but do not overmix.
- Drop onto ungreased cookie sheet.
- Bake 12-15 minutes.
- Recipe will make 12 scones. Great from the oven, but also freeze nicely for later.
