Buttermilk Pudding

Very refreshing in hot weather! Preparation time includes chilling time. From Heavenly Hash

  1. In small bowl, soften the gelatin in cold water.
  2. Then add boiling water and stir until dissolved.
  3. Using large bowl, dissolve the sugar in buttermilk.
  4. Add lemon juice and rind.
  5. Strain the gelatin into it and mix until well blended.
  6. Pour into 2 quart dish.
  7. Chill until set, about 3 hours.
