Buttermilk Cornbread

Ingredients
- 2 tablespoons vegetable oil
- 3⁄4 cup yellow cornmeal
- 1⁄4 cup all-purpose flour
- 1 1⁄2 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
Directions
- preheat oven to 450*.
- heat oil in 8" cast iron skillet for 5 minutes.
- combine dry ingredients.
- stir together buttermilk and egg.
- add buttermilk mixture and hot oil from skillet to dry ingredients, stirring just until moistened.
- pour into hot skillet.
- bake 20 minutes.
