Buttermilk Coconut Pecan Pie

Yields: 1-2 pies
Ingredients
- 2 1⁄2 cups sugar
- 6 eggs, beaten
- 1⁄2 cup butter, melted
- 2 tablespoons flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1⁄2 teaspoon salt
- 1 cup buttermilk
- 1 cup coconut
- 1 cup pecans, chopped
Directions
- Mix all ingredients.
- Pour into 2 8-inch unbaked pie shells, or 1 10-inch unbaked pie shell.
- Bake at 325°F for an hour, or until pie is almost set in the middle.
- Cool and serve.
