Buttermilk Biscuits

Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon baking soda
- 1⁄4 cup shortening
- 1⁄4 cup butter, plus
- 1 tablespoon melted butter, divided
- 1 cup buttermilk
Directions
- Preheat oven to 425°F Combine the flour, baking powder, sugar, salt and baking soda in a medium bowl. Cut in the shortening and 1/4 cup butter with a pastry blender or 2 knives until coarse crumbs form.
- Make a well in the center and add the buttermilk. Quickly fold the dry ingredients into the buttermilk with your hands until a sticky dough forms.
- Transfer the dough to a floured surface. Gently fold the dough over itself 3 or 4 times to create layers. Roll the dough to a 1-inch thickness.
- Cut with a 3-inch biscuit cutter, pushing straight down through the dough. Repeat with any remaining scraps of dough. Place the biscuits on a baking sheet 1/4 inch apart. Brush with the melted butter. Bake until golden brown, 20–22 minutes. Cool slightly.
