Butter Rum Glazed Applesauce Cake

Ingredients
Cake
- 1⁄3 cup butter
- 3⁄4 cup sugar
- 1 cup applesauce
- 1 apple, cored, peeled and chopped
- 1 teaspoon vanilla
- 1 1⁄4 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄2 teaspoon salt
Butter Rum Glaze
- 2 tablespoons butter
- 1 cup powdered sugar
- 1⁄2 teaspoon rum extract
- 3 -4 teaspoons half-and-half
Directions
- Melt butter in a saucepan over medium heat. Cook and stir for 2 to 2 1/2 minutes until butter begins to brown. Immediately remove from heat and stir in sugar, applesauce, apple and vanilla. Set aside.
- Combine remaining ingredients in a large bowl and stir in applesauce mixture. Pour into a greased 8x8 baking dish.
- Bake at 350ºfor 25 minutes or until a toothpick inserted in center comes out clean.
- Pour warm rum glaze over hot cake. Let cake cool for 30 minutes and serve warm.
- Glaze: Melt butter in a saucepan over medium heat. Cook and stir for 2 to 2 1/2 minutes until butter begins to brown. Immediately remove from heat and stir in remaining ingredients until spreadable and smooth.
