Butter Pie Crust

Elemental pie crust recipe. Use good fat, keep it cold, work quickly. Food processor is a must. Try mixing two types of fats. Half butter, the other half shortening or lard. Herbs can but mixed in the crust for savory pies and quiches. Show more

Yields: 1 crust

Ingredients

  • 1 14 cups flour
  • 1  teaspoon salt
  • 12 cup butter
  • 14 cup  ice water

Directions

  1. Put flour and salt in food processor. Slice chunks of butter in to food processor. Process for about 10 seconds. Turn processor and add water while running through the feed tube, until just sticking together. Do not expect to use all the water.
  2. Work quickly roll out the dough. Put the crust in the fridge while preparing the filling. The butter should stay in small bits and not melt until it is in the oven.
