Butter Pecan Cookies

Simple basic cookie that most everyone loves. I love pecans so this is right up my alley.

• Yields: 2 dozen cookies

Ingredients

• 1  cup butter
• 1  egg, beaten
• 2  teaspoons baking powder
• 1  cup pecans, finely chopped
• 3⁄4 cup sugar
• 2 1⁄2 cups flour
• 1  teaspoon vanilla
• 1⁄2 teaspoon salt

Directions

1. Cream butter and sugar.
2. Add egg.
3. Add flour, salt, baking powder and pecans.
4. Mix in vanilla.
5. Chill dough 1 hour.
6. Roll out 1/8 inch thick and cut with any size cutter.
7. Bake at 400 for 8 minutes or until nice and light brown.
