Bush Tomato Dressing on a Bed of Greens

Ingredients
- 100 g bush tomatoes, Blanched
- 75 ml extra virgin olive oil
- 10 ml tarragon vinegar
- salt and pepper
- 4 basil leaves, chiffinade
- 1 head lettuce
Garnish
- basil
- tarragon
Directions
- Puree tomatoes. Mix with tarragon vinegar then whisk in the extra virgin olive oil slowly, season and serve over greens mixed with basil.
