Buffalo Style Empanadas

I think this would make a great lunch, especialy using the same method and some leftover taco meat. Or you could use leftover ground beef and barbecue sauce. I got this recipe from a Pilsbury booklet. What about ham, leftover alfredo sauce and some swiss cheese? Show more

Ingredients

  • 34 lb lean ground beef
  • 13 cup  chopped green onion
  • 13 cup  buffalo wing sauce
  • 1 (16 1/3ounce) can  grands refrigerator  biscuits
  • 1  cup  shredded monterey jack cheese
  • 12 cup  ranch salad dressing, optional for dipping

Directions

  1. Heat oven to 375 degrees. Brown ground beef in a large skillet over medium high heat for 5-7 minutes or until thoroughly cooked, stirring frequently. Drain, add onions, sauce and mix well. Remove from heat.
  2. Seperate dough into 8 biscuits. Press or roll each to form a 6 inch round. Spoon beef mixture evenly onto half of each biscuit round. Top each with 2 tablespoons of cheese. Fold dough over filling, press edges to seal. Place on an ungreased large cookie sheet.
  3. Bake at 375 for 12-17 minutes or until golden brown. Serve with ranche dressing for dipping.
