Bubble and Squeak

Serves: 4

Ingredients

  • 2  slices bacon
  • 1  onion, sliced
  • 1  medium potato, cooked and mashed
  • 14 head cabbage, shredded and lightly steamed

Directions

  1. Cook bacon slices in a large skillet and remove when crispy. Crumble and set aside.
  2. Add onions to pan and gently fry until tender. Add potato and cabbage. Press together to form a large cake. Cook until first side is brown then turn with a spatula and brown the other side.
  3. Slide out from pan and sprinkle with crumbled bacon.
  4. Serve with toast and/or eggs.
