Brunch Time Potato and Bacon Casserole

Ingredients
- 1 (20 ounce) bag Simply Potatoes® Shredded Hash Browns
- 1 medium red bell pepper, chopped
- 1 medium onion, chopped
- 1 lb bacon, fried, drained, & crumbled
- 1 (4 ounce) jar sun-dried tomatoes, drained and chopped
- 1 cup monterey jack cheese
- 1 teaspoon cumin
- 2 teaspoons dried cilantro
- seasoning salt
- pepper
- 5 large eggs, beaten
- 1⁄2 cup milk
- 1 teaspoon baking powder
Directions
- combine all ingredients except eggs,milk & baking powder in large bowl.
- mix well & transfer to 2 qt casserole.
- beat eggs,milk, & baking powder together & pour over casserole.
- bake at 350 for 1 hour.
