Bruce's Favorite Pork Roast

Serves: 4-6
Ingredients
- 3 -4 lbs boneless pork roast
- 2 teaspoons canola oil
- 2 garlic cloves, slivered
- 2 tablespoons soy sauce
- 1 medium onion, sliced
- 2 tablespoons brown sugar
- 1 (10 1/2ounce) can cream of mushroom soup
- 5 small potatoes, peeled and cut in halves
- 1 teaspoon kosher salt
- 1⁄2 teaspoon black pepper
Directions
- Heat oil in dutch oven add roast and brown well on all sides. Cut deep pockets into meat after browning and insert some of the garlic slivers. Place roast in crock pot. Sprinkle on soy sauce and then brown sugar on top of meat. Scatter onions over and remaining garlic. Cover and cook on high 1 hour. After 1 hour add peeled potatoes, salt and pepper, and soup over top of roast. Cook 3 more hours on high. Then 3 hours on low. Total=4 hours on high=3 on low for 7 hours cooking. 8-10 hours on low should also do the trick=buit I wanted to post the way I made it for hubby. I serve with salad, maple carrots and fresh rolls. Enjoy! This is hubby's favorite!
