Brown Rice and Mushrooms

Ingredients
- 1 cup brown rice
- 2 cups vegetable stock
- 1 (4 ounce) can mushrooms, drained
- 1 tablespoon olive oil
- 1 teaspoon rice vinegar
Directions
- Combine all ingredients in a medium saucepan. Mix well.
- Bring to a boil.
- Reduce heat and cover.
- Simmer for 45-50 minutes or until rice is tender.
- Stir, remove from heat, covered and allow to stand for 5 minutes.
