Brown Bread Mufins

Similar to New England Brown Bread but muffin size.These are nothing like the overly sweet, cake like muffins from a bakery. Delicious served alongside a Boston baked bean dinner, barbeque meats or with a salad at lunch. You may substitute whole wheat flour for one of the listed flours.( If you like Irish soda bread with raisins and caraway feel free to add about 3/4 tsp. of caraway seed to this recipe.) Show more

Directions

  1. Heat oven to 400 and grease standard size muffin tin.
  2. Mix flours, cornmeal, salt and baking soda.
  3. In seperate bowl: mix egg, vegetable oil, molasses, sugar and buttermilk.
  4. Add buttermilk mixture to dry ingredients stirring until blended.
  5. Stir in raisins.
  6. Fill muffin tins 3/4 full. Bake 15 minutes or until tester tests clean.
