Broke Guy's Veggie Brown Rice Stir-Fry

Ingredients
- 1 1⁄2 cups brown rice
- 2 tablespoons vegetable oil
- 8 ounces mushrooms, sliced
- 2 garlic cloves, sliced
- 1⁄2 small head cabbage, sliced
- 3 tablespoons oyster sauce
- 2 tablespoons rice vinegar
- 1 (11 ounce) package frozen spinach, thawed
- kosher salt, to taste
Directions
- Cook the rice according to the package directions.
- While the rice is cooking, heat the oil in a large skillet over medium-high heat. Add the mushrooms and cook until brown (4 to 6 minutes). Add the garlic and cook until fragrant (30 seconds).
- Add the cabbage and saute until wilted (2 to 3 minutes). Add the oyster sauce and rice vinegar. Stir-fry tossing frequently until liquid is gone (2 to 3 minutes). Add the spinach and a pinch of salt. Cook until partly wilted (1 to 2 minutes).
- Serve the mushrooms and spinach over the rice.
