Broccoli Cornbread

Yields: 1 9x13 pan
Ingredients
- 2 (8 1/2ounce) boxes Jiffy cornbread mix
- 1 large onion, chopped
- 4 eggs (or substitute)
- 1⁄2 cup cottage cheese
- 1 (10 ounce) box frozen chopped broccoli, thawed and drained
- 1⁄2 cup butter, softened
Directions
- Mix all ingredients.
- Pour into 9x13 inch pan.
- Bake at 375°F for 20 to 30 minutes, until toothpick comes out clean.
- Serve warm.
