Broccoli-Cheese Pilaf

This recipe is from my "Irish Cooking" cookbook.

Serves: 6

Ingredients

  • 14 cup  minced onion
  • 14 cup  diced red bell pepper
  • 2  cups  instant rice
  • 1 13 cups water
  • 1 (10 3/4ounce) can  condensed  broccoli cheese soup
  • 1  tablespoon  minced fresh parsley
  • 12 teaspoon salt

Directions

  1. Lightly coat medium saucepan with nonstick cooking spray.
  2. Add onion and pepper; cook and stir until tender.
  3. Stir in rice; add water, soup, parsley, and salt.
  4. Mix well.
  5. Bring to a boil.
  6. Reduce heat; cover and cook 10 minutes or until liquid is absorbed and rice is tender.
