Broad Bean, Freekeh and Mint Salad

Ingredients
- 1 cup fresh broad bean, cooked in a little sea salt until just soft
- 1⁄2 cup freekeh, cooked (will give you a cup)
- 1 small red onion, finely sliced
- 1 garlic clove, crushed
- 1 tomatoes, diced
- 1 cucumber, diced
- 1 cup mint, roughly chopped
- 1 cup fresh parsley leaves, roughly chopped
- 3 tablespoons extra virgin olive oil
- 1 lemon, zest of
- 1 tablespoon lemon juice
- 2 teaspoons sea salt
Directions
- In a large bowl, toss all of your ingredients together. Taste for seasoning and adjust if necessary.
