Broad Bean and Rocket Salad With Bean Butter

Ingredients
- 2 (400 g) butter beans (drained and rinsed)
- 4 teaspoons creamed horseradish
- 5 tablespoons olive oil
- 1 lime (zest and juice)
- 175 g broad beans (fresh or frozen cooked and peeled)
- 2 tablespoons walnut oil
- 70 g rocket
- lemon wedge
Directions
- Whizz butter beans with horseradish olive oil lime zest and juice and 3 tablespoons warm water until smooth and creamy.
- Toss broad beans in walnut oil, add rocket and toss again.
- Pile the butter bean mix into a shallow serving dish and put the bean and rockets salad in large bowl, season well with black pepper and serve with lemon wedges and bread sticks.
