Yields: 1 batch
Ingredients
- 1⁄2 cup kosher salt
- 2⁄3 cup sugar
- 1 tablespoon peppercorn
- 1 tablespoon rosemary
- 1 tablespoon mustard seeds
- 1⁄2 teaspoon celery seed
- 4 tablespoons dried onion
- 3⁄4 gallon water
Directions
- Mix all the above in large pot and bring to quick boil to dissolve salt and sugar. Let cool completely.
- Pour over your chicken or pork in covered bowl and let soak for 4-6 hours.
- Drain, pat meat dry with paper towel and prepare as you prefer.
