Brenda's Xmas Pudding

Third generation recipe! This Xmas pudding is very rich! Make well ahead and let it age. It has become tradition in our house for the whole family to make it 3 weeks before December 25. Show more

Yields: 2 puddings

Ingredients

  • Mixture A

  • 1 12 cups raisins
  • 1 12 cups currants
  • 1 12 cups brown sugar
  • 13 cup  candied peel
  • 14 cup  sliced almonds
  • 34 cup flour
  • 34 teaspoon baking soda
  • 1 14 teaspoons salt
  • 1 12 teaspoons cinnamon, -ground
  • 14 teaspoon nutmeg, -ground
  • 14 teaspoon clove, -ground
  • 14 teaspoon ginger, -ground
  • 1 12 cups  breadcrumbs (soft day-old)
  • Then Add

  • 1  cup butter
  • 1  egg
  • 1  cup carrot (grated)
  • 1  cup apple (grated)
  • 1  cup potato (grated)

Directions

  1. Mix all "Mixture A"ingredients together.
  2. Cut butter finely and blend with mixture.
  3. Beat egg and blend with mixture.
  4. Add carrot, apple and potato and mix thoroughly.
  5. Pour two thirds full in greased containers.
  6. Sit pudding molds on rack inside container that is half-filled with water.
  7. Steam for three to four hours over low heat in a closed container.
