- 2 cups black beans
- 8 eggs
- 2 cups mexican cheese
- 1 sweet onion, chopped
- 1 tomatoes, chopped
- 1 avocado, sliced
- 3 cups romaine lettuce, coppped
- 1⁄2 cup cilantro, chopped
- 1 cup salsa, fresco
Directions
- Fry tortillas in oil.
- then place in oven @ 275 until crisp.
- scrambel eggs.
- to the fried tortilla.
- add:
- black beans.
- eggs.
- onions.
- romaine lettuce.
- tomatoes.
- top with:
- cheese
- cilantro.
- avocado.
- salsa fresco.
- serve with lime wedges, salsa fresco, and pickled sliced jalapenos.
