Breakfast Strata

My cousin and I made brunch for the day after her brother's wedding. We found this recipe somewhere and played with it to our liking. Almost any meats or vegetables can be used. Show more

Serves: 20

Yields: 2 9 X 13 pans

Ingredients

  • 2  ounces ham, chopped
  • 12  ounces sausage, cooked & crumbled
  • 1  small onion, chopped
  • 12 green pepper, chopped
  • 12  red pepper, chopped
  • 8  ounces mushrooms, sliced
  • 10  eggs (I used 2 large egg beaters)
  • 1  cup sour cream
  • 2  cups  shredded cheddar cheese (I used Sharp cheddar)

Directions

  1. Cook the sausage and drain. Spray a casserole dish with cooking spray. Mix meats and vegetables together in casserole. Mix eggs and sour cream together, pour over meat mixture. Spread cheese over the top. (I poked it down in the mixture just a bit.
  2. Bake at 350’ until set Approximately 1 hour.
  3. This recipe will fill one of those Party size foil pans. I used (2) 9 X 13 pans.
