Breakfast Oatmeal Bake

I tweaked this from the recipe on Broken and Bougie.  You can also make them into muffins but will need to lower the baking time.  I bake them, cool and then freeze in individual portions so I can warm them up anytime without worrying if i'll eat it all before it goes bad. Show more

Yields: 1 muffin/bar

Directions

  1. Grease a 13x9" pan and preheat oven to 350 degrees.
  2. Mix together the maple syrup, cinnamon, nutmeg, baking powder, salt, almond milk, egg and vanilla.
  3. Add in fruit, flax seed, chia seed, and oatmeal. Mix well.
  4. Pour into the prepared pan and slice banana all over the top.
  5. Bake for 35-40 minutes.
