Breakfast Muffins Bonanza

A very healthy muffin recipe given to me by my cousin.

Directions

  1. Preheat oven to 400 f (200 C).
  2. Spray 12 muffin cups with cooking spray.
  3. Combine brown sugar, oil, buttermilk, egg, and molasses in large mixing bowl.
  4. Add remaining ingredients.
  5. Mix well.
  6. Spoon batter into greased muffin cups.
  7. Bake@ 400 f for 15 to 20 minutes, or until top springs back when lightly touched.
  8. Freezing: excellent.
