Breakfast Casserole

I make this every Christmas morning. Prepare the evening before and refrigerate overnight. I brown the sausage ahead of time and freeze in ziploc bag for faster preparation. Show more

  1. Brown sausage, then drain well.
  2. Grease a 9x13" pan with cooking spray. Set aside.
  3. In large bowl mix eggs with mustard, milk and salt until fully combined. Set aside.
  4. Add toasted and cubed bread, sausage and 8 oz. cheese into prepared pan. Stir to combine.
  5. Mix eggs with mustard, milk and salt and pour over other ingredients in pan.
  6. Cover with plastic wrap and refrigerate overnight. Save the other 8oz. of cheese for morning.
  7. In the morning, remove casserole from fridge, allowing to sit at room temperature while oven is preheating to 375 degrees.
  8. Remove plastic wrap, top with remaining 8 oz. cheese, then cover with aluminum foil.
  9. Bake covered in preheated oven for 45 minute Uncover, then bake an additional 10-15 minute until eggs have set and cheese is melted.
