Breakfast Casserole

Ingredients
- 16 -20 ounces pork sausage, cooked (we prefer Hot!)
- 6 slices bread, toasted and cubed
- 16 ounces colby-monterey jack cheese, grated
- 6 eggs, beaten
- 2 cups milk
- 1 1⁄2 teaspoons dry mustard
- 1 teaspoon salt
Directions
- Brown sausage, then drain well.
- Grease a 9x13" pan with cooking spray. Set aside.
- In large bowl mix eggs with mustard, milk and salt until fully combined. Set aside.
- Add toasted and cubed bread, sausage and 8 oz. cheese into prepared pan. Stir to combine.
- Mix eggs with mustard, milk and salt and pour over other ingredients in pan.
- Cover with plastic wrap and refrigerate overnight. Save the other 8oz. of cheese for morning.
- In the morning, remove casserole from fridge, allowing to sit at room temperature while oven is preheating to 375 degrees.
- Remove plastic wrap, top with remaining 8 oz. cheese, then cover with aluminum foil.
- Bake covered in preheated oven for 45 minute Uncover, then bake an additional 10-15 minute until eggs have set and cheese is melted.
