Breakfast Bars

A homemade breakfast bar that is SCD (specific carbohydrate ) approved. It tastes really great

Serves: 8

Yields: 8 bars

Ingredients

  • 1  cup honey
  • 13 cup butter
  • 1  cup  of unsalted raw  mixed nuts, chopped
  • 12-1  cup  of shaved unsweetened coconut (use to your taste but completely optional if you don't like coconut)
  • 12 cup pitted dates, chopped
  • 12 cup prune, chopped
  • 12 cup  dried apricot, chopped
  • 1  teaspoon vanilla extract

Directions

  1. Preheat oven to 360°F.
  2. Grease or butter an 8x8 square tin pan.
  3. Heat honey and butter in a saucepan and stir until butter has melted and is well combined with honey. Turn off the heat and add mixture to all other ingredients.
  4. Mix all ingredient well and pour into the prepared pan.
  5. Bake for 30 minutes.
  6. Cool in refrigerator until set. ( about 30-45 min,).
  7. Cut into bars and wrap each bar individually with wax/baking paper as they are sticky! Then store in an airtight container in the refridgerator.
  8. ***Note that you will want to eat these straight from the fridge as warmer temperatures with soften the bar up too much.
  9. prep time doesn't include cooling and cutting the bars afterwards.
