Breakfast Banana-Nut Bread

Ingredients
- 1⁄4 cup butter or 1⁄4 cup margarine
- 1⁄2 cup brown sugar
- 1 egg, beaten
- 1 cup old-fashioned oatmeal
- 1 1⁄2 cups mashed bananas (I used 3)
- 2 teaspoons vanilla
- 1 cup all-purpose flour
- 1⁄2 cup whole wheat flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 cup macadamia nuts
- 2 tablespoons flax seed meal
Directions
- Combine sugar and butter until creamy.
- Add egg, mix well.
- Add oatmeal, bananas, and vanilla.
- Combine remaining ingredients in a seperate bowl, and then add to banana mixture until just moistened.
- Prepare a loaf pan with cooking spray & flour.
- Pour in batter.
- Bake in 350 degree oven for 1 hour or until tester comes out clean.
