Breadfruit Doughnuts

Ingredients
- 1 egg
- 1 cup ripe breadfruit, uncooked and mashed
- 2 tablespoons shortening
- 1 cup flour
- 1⁄4 teaspoon nutmeg
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 3 teaspoons baking powder
- 1⁄2 cup sugar
- oil (for frying)
Directions
- Beat the egg in a bowl and add uncooked breadfruit pulp and shortening.
- Mix well.
- Sift dry ingredients together and add to the egg/pulp/shortening mixture.
- Mix well.
- Preheat your frying oil to 370°F.
- Drop by spoonfuls into oil and fry until golden brown.
- Drain on paper towels.
- Shake in a bag with sugar to coat outside.
