Breaded Pork Chops

Based on a recipe from "Cuisine at Home Weeknight Menus"

Ingredients

  • 4  pork loin chops, 3/4 - 1-inch thick, bone in, 4 to 6 ounce each
  •  salt and pepper
  • 14 cup all-purpose flour
  • 2  eggs, beaten
  • 2  cups  breadcrumbs
  • 14 cup  vegetable oil

Directions

  1. Preat oven to 400°F.
  2. Prepare chops, pounding to 1/2" thick. Season with salt and pepper.
  3. Dredge chops in four, shaking off excess, then dip in egg, letting excess drip back into the bowl. Then coat with bread crumbs, patting so crumbs adhere. Heat oil in a large skillet over medium. Saute 2 chops, turning once, until golden on both sides, about 6 minutes total. Transfer to a baking sheet, then repeat with remaining chops. Place baking sheet in oven; roast 6 more minutes.
