Bread Stuffing for Turkey

From my very old Kosher cookbook, p. 470

Serves: 4

Ingredients

  • 4  cups  stale  bread cubes
  • 14 teaspoon pepper
  • 1  teaspoon salt
  • 14 teaspoon thyme, Marjoram or 14 teaspoon sage
  • 12-1  teaspoon poultry seasoning
  • 14 cup  finely chopped onion
  • 14 cup  melted chicken fat
  • 13 cup  chicken stock

Directions

  1. Combine bread, seasonings and onion. Slowly add chicken fat, tossing lightly with a fork until blended.
  2. For a more moist stuffing, slowly add the hot water or stock.
  3. Allow 1 cup stuffing for each pound of poultry.
