Bread Pudding Muffins

Sounds good, got this out of a local magazine.

Yields: 12 muffins

Ingredients

  • 1 12 cups milk
  • 4  egg whites
  • 3  tablespoons sugar
  • 1 14 teaspoons cinnamon
  • 1  teaspoon vanilla
  • 2  tablespoons  unsweetened apple juice concentrate
  • 12  slices  raisin bread
  • 12 cup raisins

Directions

  1. preheat oven to 350 degrees.
  2. spray muffin tins with nonstick spray.
  3. cube raisin bread.
  4. mix milk, egg whites, sugar, cinnamon, vanilla & apple juce.
  5. add cubed bread and raisins.
  6. let sit for 5 minute.
  7. fill muffin tins 3/4 full.
  8. bake for 30 minutes.
  9. let sit in pan for 10 minutes before serving.
