  1. Combine first 7 ingredients; mix well.
  2. Pat mixture in a bowl lined with plastic wrap. Cover and chill.
  3. Unmold and put round part up on a serving platter and sprinkle with parsley.
  4. Serve with pumpernickel bread party slices.
