Bran Muffins

Ingredients
- 2 cups oat bran
- 1⁄4 cup firmly packed brown sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 banana
- 1⁄2 cup chopped pecans
- 1⁄2 cup raisins
- 1 cup skim milk
- 2 egg whites
- 1⁄4 cup honey
- 2 tablespoons canola oil
Directions
- Heat oven to 425. Line 12 medium muffin cups with paper baking cups.
- Combine dry ingredients; mix well. Add combined milk, egg whites, honey and oil Add remaining ingredients mix until moistened. Add in dry ingredients, mix well.
- Fill muffin cups 3/4 full. Bake 15-17 minutes or until golden brown.
