Braised Lentils

Serves: 4-6
Ingredients
- 3 tablespoons olive oil
- 1 cup onion, chopped
- 2⁄3 cup carrot, chopped
- 1⁄2 cup celery, chopped
- 1 1⁄4 cups green lentils, picked over
- 4 cups chicken broth
Directions
- Saute the veggies for 5 minutes. Add lentils and stir one minute.
- Add stock and bring to a boil. Reduce and cook for 35 minutes. Add salt and pepper for seasoning.
