Braised Leeks

Ingredients
- 1 tablespoon olive oil
- 2 1⁄2 cups finely chopped leeks, white part only
- 1⁄4 cup white wine
- 1 teaspoon minced drained capers
- 1⁄4 teaspoon fresh thyme
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
Directions
- In saucepan over medium low heat, cook leeks in oil, until soft, but not browned, about 12 minutes.
- Add wine and cook until evaporated. Remove from heat and stir in capers, thyme, salt and pepper.
