Bordelaise Sauce

This is a wonderful sauce for any steak or even pot roasts.

  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the shallots, garlic, and carrots.
  3. Sauté for 5 minutes or until limp but not brown.
  4. Add the broth, sherry, and lemon juice.
  5. Heat until almost boiling.
  6. Add the mushrooms and cook over low flame for 5 minutes.
  7. Season with salt and pepper to taste.
  8. Mix the cornstarch with 1/4 cup water and add to the sauce.
  9. Stir until thickened.
  10. Serve with your favorite steak or pot roasts.
