Ingredients
- 1 tablespoon butter
- 3 tablespoons finely minced shallots
- 1 teaspoon minced garlic
- 1 tablespoon finely minced celery
- 1⁄2 cup Kahlua
- 1⁄2 cup ketchup
- 2 tablespoons low sodium soy sauce
- 2 tablespoons whiskey
- 1 1⁄2 tablespoons balsamic vinegar
- 1 tablespoon cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1⁄4 teaspoon liquid smoke
- 2 tablespoons brown sugar
- kosher salt
- fresh ground pepper
Directions
- Melt butter over medium heat in a saucepan until foamy.
- Add minced shallots, garlic and celery and sauté until lightly golden, about 3 minutes or so.
- Stir in remaining ingredients and bring to boil. Reduce the heat and simmer until thick and richly flavored, 8 to 10 minutes, whisking from time to time.
- Season the sauce with salt and pepper.
- Coat chicken (or marinate) with sauce before grilling, baste as you grill and serve lathered in sauce.
